I am an Australian and I have a work permit valid to work for a company in Toronto for the next year. It states on the permit I can only work for the named company however I wish to change jobs. Do I find a new job in Canada and then request a change to my work permit?

Yes, you would be able to apply for a new work permit once you have received a new job offer from a Canadian employer.
