I am currently working in Montreal on a 1yr open work permit. The company i work for have offered me more work and have applied for an LMO and CAQ (Quebec).

I am returning to the UK for a holiday, whilst my application is being processed. My current work permit will expire whilst i'm in the UK.

My question(s) are as follows:

assuming my LMO and CAQ are granted within the next few weeks and i return to Canada before my current permit expires, am i elligable for the 90 day grace period, and continue to be employed on my return to canada?

or should i wait in the UK till i have the necessary paper work to return?

If you are within Canada and have sought renewal of a work permit prior to its expiration, then you benefit from "implied status" by which you are allowed to continue working until the decision is received. As a general rule, implied status does not apply to someone who has departed Canada.
